Mango Powder (Amchur)
Amchur, or Amchoor, is dried unripe mango powder, and is used to add a slightly sour flavor note to Indian dishes that call for it. It is often added to dishes that need tanginess but not moisture: a batter for a pakora (a spiced, fried fritter), or a filling for a samosa. Amchur is the key ingredient in chaat masala, funky, salty, spicy, and sour spice blend is all you need to transform anything into a chaat (a type of street snack popular throughout South Asia).
