Curry Leaves (Kari), Dried
Curry leaves are a very common recipe ingredient in Indian cooking, especially South Indian recipes. Fresh curry leaves are hard to obtain, so most recipes call for dried. When substituting, use about 1/3 as much dried as fresh in recipes that call for fresh --the dried leaves are very potent! A little goes a long way.
